Ingredients
  

  • 2 lbs frozen meatballs beef or turkey
  • 1 cup pineapple chunks with juice
  • ½ cup ketchup
  • ½ cup rice vinegar
  • ½ cup brown sugar
  • ¼ cup soy sauce
  • 2 tablespoons cornstarch mixed with 2 tablespoons water
  • 1 small bell pepper chopped
  • 1 teaspoon garlic powder
  • ½ teaspoon ginger powder

For Garnish:

  • Chopped green onions & sesame seeds

Instructions
 

Step 1: Prep the Sauce

  • In a bowl, whisk together pineapple juice, ketchup, vinegar, brown sugar, soy sauce, garlic powder, and ginger powder.

Step 2: Assemble in Crockpot

  • Place frozen meatballs and chopped bell pepper into the slow cooker.
  • Pour the sauce over the meatballs, making sure everything is coated.

Step 3: Cook & Thicken

  • Cover and cook on LOW for 3-4 hours or HIGH for 2 hours.
  • Mix cornstarch and water, stir it in, and cook for 15 more minutes.

Step 4: Serve & Enjoy

  • Garnish with sesame seeds and green onions.
  • Serve over rice, noodles, or eat straight from the pot.
