This vegan keto crockpot beef and broccoli recipe features plant-based “beef” and fresh broccoli in a flavorful, low-carb sauce.

- 1 lb vegan beef substitute seitan, soy curls, or mushrooms
- 3 cups broccoli florets
- 1/2 cup low-sodium soy sauce or tamari
- 1/4 cup vegetable broth
- 2 tbsp sesame oil
- 3 cloves garlic minced
- 1 tbsp fresh ginger grated
- 1 tbsp rice vinegar
- 1 tsp ground black pepper
- 1 tsp xanthan gum optional, for thickening
Toss vegan beef substitute with garlic, ginger, soy sauce, rice vinegar, and black pepper.
Place mixture in crockpot.
Add vegetable broth and sesame oil.
Cover and cook on low for 3 hours.
Add broccoli florets during last 30 minutes of cooking.
If desired, sprinkle xanthan gum and stir to thicken sauce before serving.
