Ingredients

  • 2 boneless skinless chicken breasts
  • 1 can 28 oz fire-roasted diced tomatoes
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 small onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup tomato sauce
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ¼ teaspoon cayenne optional, for a little fire
  • Juice of 1 lime

For the Toppings (Pick Your Favorites):

  • Tortilla strips because crunch is key
  • Avocado sliced
  • Shredded cheese
  • Cilantro chopped
  • Sour cream

Instructions
 

Step 1: Dump Everything In

  • Place chicken, tomatoes, beans, corn, onion, and garlic in the slow cooker.
  • Pour in broth and tomato sauce, then stir to mix.

Step 2: Spice It Up

  • Add chili powder, cumin, paprika, black pepper, salt, and cayenne.
  • Drizzle olive oil over the top.

Step 3: Let the Crockpot Do Its Thing

  • Cover and cook on LOW for 6-8 hours (or HIGH for 3-4 hours).
  • Don’t open the lid every five minutes—it’s not a reality show.

Step 4: Shred & Finish

  • Remove chicken, shred with forks, and return it to the soup.
