Ingredients
  

  • 1.5 lbs beef chuck roast cubed

  • 1 teaspoon paprika

  • 1 cup sour cream

  • 2 tablespoons water
  • 8 oz egg noodles for serving, optional

Instructions
 

Step 1: Prep the Ingredients

  • Chop the onion, mince the garlic, and slice the mushrooms.
  • Cut the beef into bite-sized cubes.

Step 2: Load the Crockpot

  • Place beef, onion, garlic, and mushrooms into the crockpot.
  • Pour in the beef broth, Worcestershire sauce, Dijon mustard, paprika, salt, and pepper.
  • Give it a quick stir, cover, and set to LOW for 6-8 hours or HIGH for 4 hours.

Step 3: Thicken the Sauce

  • Mix cornstarch and water in a small bowl to form a slurry.
  • Stir it into the crockpot and let it cook for another 10 minutes.
  • Add sour cream and stir until combined.

Step 4: Assemble and Serve

  • Cook egg noodles separately according to package instructions.
