Activate the yeast:
In a small bowl, combine the warm water, honey, and yeast. Stir to dissolve and let it sit for about 5-10 minutes until it becomes frothy.
Prepare the dough:
In a large mixing bowl, combine flour, salt, and sugar. Once the yeast mixture is frothy, add it to the flour mixture along with the olive oil. Mix until a dough forms.
Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic. If the dough is sticky, add a little more flour.
Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise for 1 hour, or until it doubles in size.
Preheat the oven:
Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while it heats up.
Shape the dough:
Punch down the dough and transfer it to a floured surface. Roll it out to your desired thickness (New Haven-style pizza typically has a thin crust). Transfer the rolled dough to a baking sheet or preheated pizza stone.
Add toppings:
Brush the outer edges of the pizza crust with olive oil for a crispy finish.
Spread the tomato sauce evenly over the dough, leaving a small border for the crust. Sprinkle the mozzarella cheese and Parmesan cheese over the sauce. Add any additional toppings like pepperoni, mushrooms, or onions.
Bake the pizza:
Place the pizza in the oven and bake for about 10-12 minutes or until the crust is golden and crispy and the cheese is bubbly and slightly browned.
Serve:
Remove the pizza from the oven and let it cool for a minute. Garnish with fresh basil and slice using a pizza cutter.
