Prep Ingredients: Dice the onion, mince the garlic, and drain the beans.
Sauté in Pot: In a large pot, heat a bit of oil over medium heat. Cook the onions and garlic for 2-3 minutes.
Add Chicken & Seasoning: Add chicken, beans, chilies, broth, cumin, chili powder, oregano, garlic powder, salt, and pepper. Stir.
Cook: Bring to a simmer, cover, and cook for 15-20 minutes, stirring occasionally.
Shred Chicken: Once the chicken is cooked through, remove it from the pot. Shred it with two forks.
Finish the Chili: Return the chicken to the pot, then stir in sour cream and heavy cream. Let it simmer for another 5 minutes.
Serve: Ladle into bowls and top with optional garnishes like cheese, cilantro, or a squeeze of lime.
