Ingredients
  

  • Ground Italian sausage 1 lb
  • Onion diced (1 medium)
  • Garlic minced (3 cloves)
  • Tomato sauce 2 cups
  • Diced tomatoes 1 can, 14.5 oz
  • Chicken or beef broth 4 cups
  • Heavy cream 1 cup
  • Lasagna noodles broken into pieces (10 oz)
  • Italian seasoning 1 ½ tsp
  • Parmesan cheese grated (½ cup)
  • Mozzarella cheese shredded (1 cup)
  • Ricotta cheese 1 cup
  • Olive oil 2 tbsp
  • Salt and black pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat. Brown Italian sausage, breaking it into small pieces as it cooks.
  • Add diced onion and minced garlic. Cook until soft and fragrant, about 5 minutes.
  • Stir in tomato sauce, diced tomatoes, broth, and Italian seasoning. Bring the mixture to a boil.
  • Add broken lasagna noodles. Simmer for 10-12 minutes, stirring occasionally, until noodles are tender.
  • Reduce heat and pour in heavy cream. Stir until fully combined.
  • Mix in Parmesan and mozzarella cheese. Cook until cheese melts and the soup becomes creamy.
  • Ladle the soup into bowls. Top each with a dollop of ricotta cheese.
