Classic Roasted Sweet Potatoes Recipe

A vegan dish with caramelized, golden roasted sweet potatoes, seasoned simply and baked to perfection.

- Sweet potatoes – 4 medium about 2 lbs, peeled and cubed
- Olive oil – 3 tbsp
- Salt – 1 tsp
- Black pepper – ½ tsp
- Paprika – ½ tsp
- Fresh parsley – 2 tbsp chopped (for garnish)
Preheat oven to 400°F (200°C).
Line baking sheet with parchment paper.
Place cubed sweet potatoes in a bowl.
Add olive oil, salt, pepper, and paprika. Toss well.
Spread evenly on baking sheet in single layer.
Roast 30–35 minutes, flipping halfway, until edges are golden.
Garnish with parsley and serve warm.
