Classic Roasted Sweet Potatoes Recipe

A vegan dish with caramelized, golden roasted sweet potatoes, seasoned simply and baked to perfection.

Ingredients
  

  • Sweet potatoes – 4 medium about 2 lbs, peeled and cubed
  • Olive oil – 3 tbsp
  • Salt – 1 tsp
  • Black pepper – ½ tsp
  • Paprika – ½ tsp
  • Fresh parsley – 2 tbsp chopped (for garnish)

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Line baking sheet with parchment paper.
  • Place cubed sweet potatoes in a bowl.
  • Add olive oil, salt, pepper, and paprika. Toss well.
  • Spread evenly on baking sheet in single layer.
  • Roast 30–35 minutes, flipping halfway, until edges are golden.
  • Garnish with parsley and serve warm.
