Ingredients
  

  • 2 medium red onions thinly sliced
  • 1 cup white vinegar
  • 1/2 cup water
  • 1 tablespoon sugar
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black peppercorns
  • Optional: 1 garlic clove sliced, 1/2 teaspoon mustard seeds, or chili flakes for heat

Instructions
 

  • Slice the onions: Thinly slice the onions and set aside.
  • Prepare the brine: Heat vinegar, water, sugar, salt, and peppercorns in a saucepan over medium heat. Stir until sugar dissolves.
  • Pour the brine: Remove the mixture from heat and immediately pour it over the sliced onions in a jar.
  • Cool and store: Let the onions cool completely before sealing. Refrigerate for at least 1 hour (best after 24 hours).
  • Serve: Use them to elevate your tacos, salads, or cheese platters.
