- Onion chopped (1 medium)
- Garlic minced (3 cloves)
- Diced tomatoes 2 cans, 14.5 oz each
- Tomato paste 1 can, 6 oz
- Beef broth 4 cups
- Lasagna noodles broken into pieces (12 oz)
- Italian seasoning 2 tsp
- Red pepper flakes 1/4 tsp, optional
- Ricotta cheese 1 cup
- Mozzarella cheese shredded (1 1/2 cups)
- Parmesan cheese grated (1/2 cup)
- Olive oil 2 tbsp
- Salt and pepper to taste
In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.
Add chopped onion and garlic, cooking until softened and fragrant.
Stir in the diced tomatoes, tomato paste, beef broth, and Italian seasoning. Bring to a simmer.
Add the broken lasagna noodles and simmer for about 10-12 minutes until the noodles are tender.
Season with salt, pepper, and red pepper flakes (if using).
Stir in ricotta, mozzarella, and parmesan cheese until melted and creamy.
