Ingredients

  • 1 tbsp lemon juice

Instructions
 

  • Combine shredded vegan chicken, celery, apple, and red onion in a mixing bowl.
  • In a separate bowl, whisk vegan mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
  • Pour dressing over the salad mixture; toss until evenly coated.
  • Chill in the refrigerator for at least 10 minutes to let flavors meld.
  • Garnish with parsley; serve on bread, crackers, or in a bowl.
