Ingredients
  

  • 2 cups cooked black beans or 1 can, drained and rinsed
  • 1/2 cup finely chopped bell peppers
  • 1/2 cup finely chopped onion
  • 1/2 cup grated carrot
  • 1/4 cup breadcrumbs
  • 2 tbsp flaxseed meal + 5 tbsp water vegan egg substitute
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions
 

  • Preheat oven to 375°F (if baking) or heat skillet over medium heat.
  • Mix flaxseed meal with water, set aside for 5 minutes.
  • Mash black beans in a bowl until mostly smooth, leaving some texture.
  • Add chopped vegetables, breadcrumbs, spices, and flax mixture; combine well.
  • Form mixture into 4 patties, about 1/2 inch thick.
  • Cook patties in skillet with olive oil for 4–5 minutes per side, or bake 15–20 minutes.
  • Serve on vegan buns with lettuce, tomato, and avocado.
