- 2 cups cooked black beans or 1 can, drained and rinsed
- 1/2 cup finely chopped bell peppers
- 1/2 cup finely chopped onion
- 1/2 cup grated carrot
- 1/4 cup breadcrumbs
- 2 tbsp flaxseed meal + 5 tbsp water vegan egg substitute
- 1 tsp garlic powder
- 1 tsp cumin
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- Olive oil for cooking
Preheat oven to 375°F (if baking) or heat skillet over medium heat.
Mix flaxseed meal with water, set aside for 5 minutes.
Mash black beans in a bowl until mostly smooth, leaving some texture.
Add chopped vegetables, breadcrumbs, spices, and flax mixture; combine well.
Form mixture into 4 patties, about 1/2 inch thick.
Cook patties in skillet with olive oil for 4–5 minutes per side, or bake 15–20 minutes.
Serve on vegan buns with lettuce, tomato, and avocado.
