- 4 medium apples cored and sliced
- 1 tablespoon olive oil
- 1 tablespoon cinnamon
- 1 tablespoon maple syrup
- 1 tablespoon lemon juice
- 2 cups mixed greens such as arugula or spinach
- 1/4 cup chopped walnuts or pecans
- 1/4 cup crumbled feta cheese optional
Preheat the oven to 400°F (200°C).
Toss apple slices with olive oil, cinnamon, and maple syrup.
Spread the apple slices on a baking sheet.
Roast for 20 minutes, or until apples are golden and tender.
While apples roast, toss mixed greens with lemon juice.
Once apples are done, let them cool for 5 minutes.
Add roasted apples to the greens and toss gently.
Top with nuts and optional feta cheese.
Serve immediately or chill for a few minutes before serving.
