Ingredients
  

  • 4 medium apples cored and sliced
  • 1 tablespoon olive oil
  • 1 tablespoon cinnamon
  • 1 tablespoon maple syrup
  • 1 tablespoon lemon juice
  • 2 cups mixed greens such as arugula or spinach
  • 1/4 cup chopped walnuts or pecans
  • 1/4 cup crumbled feta cheese optional

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Toss apple slices with olive oil, cinnamon, and maple syrup.
  • Spread the apple slices on a baking sheet.
  • Roast for 20 minutes, or until apples are golden and tender.
  • While apples roast, toss mixed greens with lemon juice.
  • Once apples are done, let them cool for 5 minutes.
  • Add roasted apples to the greens and toss gently.
  • Top with nuts and optional feta cheese.
  • Serve immediately or chill for a few minutes before serving.
