Ingredients
  

For the crust:

  • 1 ½ cups graham cracker crumbs
  • 2 tbsp brown sugar
  • 6 tbsp butter melted

For the cheesecake filling:

  • 3 8 oz packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 1 tsp lemon juice

For the cinnamon apple topping:

  • 3 apples peeled, cored, and sliced
  • 1 tbsp cinnamon
  • 2 tbsp sugar
  • 1 tsp lemon juice

For the crumble topping:

  • ½ cup rolled oats
  • ½ cup almond flour
  • ¼ cup brown sugar
  • 5 tbsp cold butter cubed

Instructions
 

  • Make the crust: Combine graham cracker crumbs, brown sugar, and melted butter. Press into the bottom of your springform pan.
  • Prepare the cheesecake filling: Beat cream cheese and sugar until smooth. Add eggs, vanilla, sour cream, and lemon juice. Mix until creamy.
  • Prepare the cinnamon apple topping: Toss apples with cinnamon, sugar, and lemon juice. Set aside.
  • Make the crumble: Combine oats, almond flour, and brown sugar. Add cold butter and rub together until a crumbly texture forms.
  • Assemble the cheesecake: Pour cheesecake mixture over the crust. Layer cinnamon apples and top with crumble mixture.
  • Bake: Preheat your oven to 325°F (163°C). Bake for 50-55 minutes, or until the cheesecake is set.
  • Cool and refrigerate: Let the cheesecake cool before refrigerating for at least 2 hours.
