- Sweet potatoes – 4 medium about 2 lbs, peeled and cubed
- Olive oil – 2 tbsp
- Brown sugar – 3 tbsp
- Cinnamon – 1 tsp
- Salt – ½ tsp
- Nutmeg – ¼ tsp optional
Preheat oven to 400°F (200°C).
Line baking sheet with parchment paper.
Toss sweet potato cubes with olive oil, brown sugar, cinnamon, salt, and nutmeg.
Spread evenly in a single layer.
Roast 30–35 minutes, stirring halfway, until tender and caramelized.
Serve warm and watch them disappear.
