Vegan chili garlic stir-fried noodles with vegetables, soy sauce, and aromatics for a quick, spicy, weeknight meal.

- 12 oz noodles udon, rice, or spaghetti
- 1 cup broccoli florets
- 1 red bell pepper sliced
- 1 carrot julienned
- 3 garlic cloves minced
- 1 –2 tsp red chili flakes adjust to taste
- 2 tbsp soy sauce or tamari
- 1 tsp sesame oil
- 1 tbsp vegetable oil
- 2 green onions sliced
Cook noodles according to package instructions; drain and set aside.
Heat vegetable oil in a wok over medium heat.
Sauté garlic and chili flakes for 1 minute until fragrant.
Add broccoli, bell pepper, and carrot; stir-fry 3–4 minutes until tender-crisp.
Stir in soy sauce and sesame oil.
Toss in cooked noodles until evenly coated.
Garnish with green onions; serve immediately.
