For the Chicken:
- 750 g bone-in chicken cut into medium pieces
- 2 tablespoons ghee or butter
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder

- 2 tablespoons yogurt whisked
- 1 large onion finely chopped
- 4 garlic cloves minced
- 1- inch ginger grated
- 3 Kashmiri dried chilies soaked & blended into a paste
- 1 teaspoon coriander powder
- ½ teaspoon cumin seeds
- ½ teaspoon fennel powder
- ¼ teaspoon cardamom powder
- 1 cinnamon stick
- 1 bay leaf
- 1 teaspoon garam masala
- ½ cup water
For Garnish:
- 2 tablespoons fresh cilantro chopped
- 1 pinch saffron soaked in warm milk, optional but fancy
Step 1: Sear the Chicken
Heat ghee in a heavy-bottomed pan over medium heat.
Add cumin seeds, bay leaf, and cinnamon stick; let them crackle.
Throw in the chicken and sear it until golden brown (about 5-7 minutes).
