  • 1 tablespoon olive oil

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add onions and bell peppers. Sauté until soft, about 5 minutes.
  • Add vegan ground beef and cook, breaking it up, until browned.
  • Stir in fajita seasoning, chili powder, garlic powder, cumin, salt, and pepper. Mix well.
  • Pour in diced tomatoes and vegetable broth, stirring to combine. Let simmer for 5 minutes.
  • Transfer the beef and veggie mixture to a casserole dish. Top with vegan cheese.
  • Bake in the oven for 15 minutes until the cheese is melted and bubbly.
  • Serve hot, garnished with fresh cilantro (optional).
