Ingredients
  

  • 4 medium potatoes peeled and diced
  • 1 small onion chopped
  • 2 tbsp butter
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 ½ cups sharp cheddar cheese shredded
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley optional, for garnish

Instructions
 

  • Cook the Onion: In a large pot, melt butter over medium heat and sauté onions until softened.
  • Cook the Potatoes: Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Blend the Soup: Use an immersion blender to purée the soup until smooth. Alternatively, blend in batches using a regular blender.
  • Add the Cream and Cheese: Stir in the heavy cream, cheddar cheese, salt, and pepper. Heat through until the cheese melts.
  • Serve: Ladle soup into bowls, garnish with parsley if desired, and enjoy.
