Ingredients
  

  • 4 slices sourdough or whole-grain bread
  • ½ cup vegan cheddar cheese shredded
  • 4 strips vegan bacon cooked until crispy
  • 1 tablespoon vegan butter
  • 1 teaspoon Dijon mustard optional
  • Pinch of black pepper

Instructions
 

  • Heat skillet over medium heat.
  • Spread vegan butter on one side of each bread slice.
  • Place two slices buttered side down in the skillet.
  • Spread mustard on top (if using).
  • Add vegan cheddar evenly across each slice.
  • Layer vegan bacon over the cheese.
  • Top with remaining bread, buttered side facing up.
  • Grill for 3–4 minutes per side until golden brown and gooey.
  • Press lightly with spatula for crispy edges.
  • Slice diagonally because, let’s face it, presentation matters.
