A delicious vegan burger using cauliflower as the base, blended with herbs, spices, and vegan binders for flavor and texture.

- 2 cups grated cauliflower
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 tbsp ground flaxseed + 5 tbsp water vegan egg substitute
- 1 tsp garlic powder
- 1 tsp dried parsley
- Salt and black pepper to taste
- Olive oil for cooking
Preheat oven to 375°F if baking, or heat skillet over medium heat.
Mix flaxseed with water; let thicken 5 minutes.
Combine grated cauliflower, breadcrumbs, onion, spices, and flax mixture.
Form mixture into 4 patties, about 1/2 inch thick.
Cook in skillet with olive oil 4–5 minutes per side, or bake 20 minutes until golden.
Serve on buns with leafy greens, roasted vegetables, or vegan condiments.
