Ingredients
  

For the Sandwich:

  • 4 slices of rustic or sourdough bread
  • ½ cup vegan mozzarella cheese shredded
  • 1 medium tomato thinly sliced
  • 6 fresh basil leaves
  • 1 tablespoon vegan butter or olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon balsamic glaze optional, but heavenly

For Serving:

  • Tomato soup or green salad optional

Instructions
 

  • Heat skillet over medium heat.
  • Spread vegan butter on one side of each bread slice.
  • Place one slice buttered side down on the skillet.
  • Layer vegan mozzarella, tomato slices, and basil leaves evenly.
  • Sprinkle salt and pepper for flavor.
  • Top with the second bread slice, buttered side up.
  • Grill for 3–4 minutes per side until golden and crisp.
  • Drizzle balsamic glaze on top if desired.
  • Slice diagonally because that’s the rule.
  • Serve warm and bask in your brilliance.
