For the Sandwich:
- 4 slices of rustic or sourdough bread
- ½ cup vegan mozzarella cheese shredded
- 1 medium tomato thinly sliced
- 6 fresh basil leaves
- 1 tablespoon vegan butter or olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon balsamic glaze optional, but heavenly
For Serving:
- Tomato soup or green salad optional
Heat skillet over medium heat.
Spread vegan butter on one side of each bread slice.
Place one slice buttered side down on the skillet.
Layer vegan mozzarella, tomato slices, and basil leaves evenly.
Sprinkle salt and pepper for flavor.
Top with the second bread slice, buttered side up.
Grill for 3–4 minutes per side until golden and crisp.
Drizzle balsamic glaze on top if desired.
Slice diagonally because that’s the rule.
Serve warm and bask in your brilliance.
