For Vegan Fish
- Vegan fish fillets soy or pea protein-based – 4 (6 oz each)
- Olive oil – 2 tbsp
- Cajun seasoning – 2 tsp
- Smoked paprika – ½ tsp
- Garlic powder – ½ tsp
- Onion powder – ½ tsp
- Salt – ½ tsp
- Black pepper – ½ tsp
For Assembly
- Corn tortillas – 8 small
- Shredded cabbage – 1 cup
- Avocado – 1 large sliced
- Fresh cilantro – 2 tbsp chopped
- Lime wedges – 4
Pat vegan fish fillets dry.
In a bowl, mix olive oil, Cajun seasoning, paprika, garlic powder, onion powder, salt, and pepper.
Brush mixture over fillets; let rest 8 minutes.
Preheat grill to medium-high; oil grates lightly.
Grill fillets 6–7 minutes per side until smoky and charred.
Warm tortillas on skillet for 1–2 minutes.
