Ingredients
  

Cookie Dough

  • 1 cup oat flour finely ground
  • 2 scoops vanilla protein powder preferred type
  • 1 2 tsp baking powder
  • 1 4 tsp salt
  • 1 3 cup natural peanut butter smooth
  • 1 4 cup honey
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 3 cup mini chocolate chips optional

Instructions
 

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • Whisk oat flour, protein powder, baking powder, and salt in a mixing bowl.
  • Add peanut butter, honey, egg, and vanilla. Mix until a thick dough forms.
  • Fold in chocolate chips evenly throughout the dough.
  • Scoop portions onto the baking sheet and gently flatten each mound.
  • Bake for 12 minutes until edges are lightly golden and centers remain tender.
  • Cool on the baking sheet briefly, then transfer to a rack to finish cooling.

Notes

For softer cookies, remove them when centers still look slightly underbaked. For crispier cookies, bake one to two minutes longer. Freeze baked cookies or unbaked dough portions for up to three months. Handle warm cookies gently while they set. Customize flavors with nuts, dried fruit, spices, or different chips. Store in an airtight container at room temperature for four days or refrigerate for one week.
