- Whole wheat tortillas – 4 large
- BBQ chicken breast – 2 about 12 oz, sliced
- Romaine lettuce – 2 cups shredded
- Red bell pepper – 1 medium sliced
- Red onion – ½ medium thinly sliced
- Avocado – 1 medium sliced
- Vegan mayo or Greek yogurt – ½ cup
- Lemon juice – 1 tbsp
- Olive oil – 1 tsp
- Salt – ½ tsp
- Black pepper – ½ tsp
Cook chicken 7 minutes per side until done, brush with BBQ sauce.
Slice chicken into thin strips.
Mix mayo, lemon juice, salt, and pepper for dressing.
Lay tortilla flat.
Add lettuce, bell pepper, onion, avocado.
Top with BBQ chicken strips.
Drizzle dressing.
Roll tortilla tightly.
Slice diagonally and serve.
