Ingredients
  

  • Sweet potatoes – 2 large about 1.5 lbs, cubed
  • Olive oil – 2 tbsp
  • Balsamic vinegar – ¼ cup
  • Maple syrup – 2 tbsp
  • Salt – 1 tsp
  • Black pepper – ½ tsp
  • Fresh thyme – 1 tsp chopped

Instructions
 

  • Preheat oven to 425°F (220°C). Line baking sheet with parchment paper.
  • Toss cubed sweet potatoes with olive oil, salt, and pepper. Spread evenly on sheet.
  • Roast 30 minutes, flipping halfway.
  • In saucepan, simmer balsamic vinegar with maple syrup for 5 minutes until slightly thick.
  • Drizzle glaze over roasted potatoes, toss gently, garnish with thyme, and serve hot.
