Ingredients
Sweet potatoes – 2 large
about 1.5 lbs, cubed
Olive oil – 2 tbsp
Balsamic vinegar – ¼ cup
Maple syrup – 2 tbsp
Salt – 1 tsp
Black pepper – ½ tsp
Fresh thyme – 1 tsp

Instructions
Preheat oven to 425°F (220°C). Line baking sheet with parchment paper.
Toss cubed sweet potatoes with olive oil, salt, and pepper. Spread evenly on sheet.
Roast 30 minutes, flipping halfway.
In saucepan, simmer balsamic vinegar with maple syrup for 5 minutes until slightly thick.
Drizzle glaze over roasted potatoes, toss gently, garnish with thyme, and serve hot.
