- 4 cups chicken broth
- 1 cup heavy cream
- Salt to taste

Cook the Bacon: In a large pot, cook bacon strips over medium heat until crispy. Remove and set aside.
Sauté the Onion: In the same pot, melt butter and sauté chopped onions until softened.
Cook the Potatoes: Add diced potatoes and chicken broth. Bring to a boil, reduce heat, and simmer for 20 minutes.
Blend the Soup: Use an immersion blender to purée the soup until smooth. Alternatively, blend in batches using a regular blender.
Finish the Soup: Stir in heavy cream, salt, pepper, and half the bacon. Heat through.
Serve: Ladle soup into bowls, garnish with remaining bacon and parsley if desired.
