  • Bread slices – 2 whole grain or sourdough
  • Ripe avocado – 1 medium
  • Eggs – 2 large or vegan substitute: soft tofu slices
  • Lemon juice – ½ tsp
  • Salt – a pinch
  • Black pepper – ¼ tsp
  • Olive oil – ½ tsp optional

Instructions
 

  • Toast bread until golden.
  • Mash avocado with lemon juice, salt, and pepper.
  • Poach eggs in simmering water for 3–4 minutes.
  • Spread avocado mash on toast slices.
  • Top with poached egg or tofu slices.
  • Drizzle olive oil if desired and serve.
