Ingredients
  

  • 2 medium avocados ripe, mashed
  • 4 slices of thick bread whole grain or sourdough preferred
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 2 tablespoons butter for grilling
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Juice of 1/2 lime
  • Optional: Tomato slices fresh basil leaves

Instructions
 

  • Prepare the avocado spread: Mash avocados with lime juice, garlic powder, and black pepper. Adjust seasoning to taste.
  • Butter the bread: Spread butter on one side of each bread slice.
  • Assemble the sandwich: Spread the avocado mixture on the unbuttered side. Top with mozzarella cheese and optional tomato slices.
  • Grill the sandwich: Heat a skillet with olive oil over medium heat. Grill sandwiches for 3-4 minutes per side until golden.
  • Serve: Slice and enjoy immediately while the cheese is warm and gooey.
