- 2 medium avocados ripe, mashed
- 4 slices of thick bread whole grain or sourdough preferred
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- 2 tablespoons butter for grilling
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- Juice of 1/2 lime
- Optional: Tomato slices fresh basil leaves
Prepare the avocado spread: Mash avocados with lime juice, garlic powder, and black pepper. Adjust seasoning to taste.
Butter the bread: Spread butter on one side of each bread slice.
Assemble the sandwich: Spread the avocado mixture on the unbuttered side. Top with mozzarella cheese and optional tomato slices.
Grill the sandwich: Heat a skillet with olive oil over medium heat. Grill sandwiches for 3-4 minutes per side until golden.
