Ingredients
  

  • Bread slices – 2 whole grain or sourdough
  • Ripe avocado – 1 medium
  • Vegan basil pesto – 2 tbsp
  • Olive oil – 1 tsp
  • Salt – ¼ tsp
  • Black pepper – ⅛ tsp
  • Lemon juice – ½ tsp

Instructions
 

  • Toast bread slices until golden brown.
  • Mash avocado with lemon juice, salt, and pepper in a small bowl.
  • Spread mashed avocado evenly on toast.
  • Add a spoonful of vegan pesto on each slice.
  • Drizzle lightly with olive oil.
  • Serve immediately.
