  • Black beans — 1½ cups mashed
  • Firm tofu — 1 cup crumbled
  • Breadcrumbs — ½ cup
  • Olive oil — 2 tablespoons
  • Soy sauce — 1 tablespoon
  • Garlic powder — 1 teaspoon
  • Smoked paprika — 1 teaspoon
  • Salt — ½ teaspoon
  • Black pepper — ¼ teaspoon
  • Vegan cheese cubes — ½ cup
  • Burger buns — 4
  • Lettuce — 4 leaves
  • Tomato — 1 large sliced

Instructions
 

  • Combine black beans (1½ cups) and crumbled tofu (1 cup) in a bowl.
  • Mash mixture until combined.
  • Add breadcrumbs (½ cup) and soy sauce (1 tablespoon).
  • Stir in garlic powder (1 teaspoon) and smoked paprika (1 teaspoon).
  • Season with salt and black pepper.
  • Divide mixture into 8 thin patties.
  • Place vegan cheese cubes (½ cup total) between patties to form 4 stuffed patties.
  • Heat olive oil (2 tablespoons) in a skillet.
  • Cook stuffed patties 7 minutes per side.
  • Assemble burgers with buns, lettuce, and tomato.
