Ingredients
  

  • Plant-based whey-style protein powder pea/soy blend: 1½ cups
  • Rolled oats: ¾ cup
  • Oat flour: ½ cup
  • Peanut butter or almond butter: ½ cup
  • Maple syrup: ¼ cup
  • Almond milk unsweetened: ¼ cup
  • Baking powder: ½ tsp
  • Vanilla extract: 1 tsp
  • Salt: a pinch
  • Dark chocolate chunks vegan, optional: 2 tbsp

Instructions
 

  • Preheat oven to 180°C and line baking tray with parchment paper.
  • Add protein powder, oats, oat flour, baking powder, and salt to a bowl.
  • Mix nut butter, maple syrup, almond milk, and vanilla until smooth.
  • Combine wet ingredients with dry mixture into thick, sturdy dough.
  • Fold chocolate chunks if using.
  • Divide dough into four equal portions and flatten slightly.
  • Bake for 12 minutes until edges set and centers stay soft.
  • Cool before serving for best structure.
