Ingredients
  

For the Casserole Base

  • Firm tofu crumbled: 200 g
  • Cooked lentils: 1 cup
  • Green beans chopped: 1 cup
  • Mushrooms sliced: 1 cup
  • Onion diced: ½ cup
  • Olive oil: 1 tbsp

For the Creamy Sauce

  • Unsweetened soy milk: 1 cup
  • Cashew butter: 2 tbsp
  • Nutritional yeast: 2 tbsp
  • Cornstarch: 1 tbsp
  • Garlic powder: 1 tsp
  • Black pepper: ½ tsp
  • Salt: ¾ tsp

For the Topping

  • Rolled oats: ¼ cup
  • Breadcrumbs vegan: ¼ cup

Instructions
 

  • Preheat oven to 190°C and lightly grease the baking dish.
  • Heat olive oil in a pan, sauté onion and mushrooms until soft.
  • Add tofu, lentils, and green beans, stirring for 3 minutes.
  • Whisk soy milk, cashew butter, yeast, cornstarch, garlic powder, salt, and pepper.
  • Pour sauce into the pan and cook until thickened.
  • Transfer mixture to baking dish and spread evenly.
  • Sprinkle oats and breadcrumbs on top.
  • Bake for 25 minutes until golden and bubbling.
