  • Ground beef lean, 90%: 500g
  • Olive oil: 1 tablespoon
  • Garlic minced: 3 cloves
  • Onion chopped: 1 medium
  • Taco seasoning: 2 tablespoons
  • Tomato paste: 2 tablespoons
  • Water: 1/4 cup
  • Corn tortillas: 8 small
  • Greek yogurt as sour cream swap: 1/2 cup
  • Shredded lettuce: 1 cup
  • Diced tomatoes: 1 cup
  • Shredded cheese cheddar: 1/2 cup
  • Lime wedges: 4

Instructions
 

  • Heat olive oil in skillet over medium heat, then sauté chopped onion and minced garlic until fragrant and soft.
  • Add 500g ground beef, cook thoroughly, breaking chunks until browned and no pink remains.
  • Stir in taco seasoning, tomato paste, and water, then simmer mixture for five minutes until thick and flavorful.
  • Warm tortillas in dry pan for one minute each side until soft and slightly toasted.
  • Assemble tacos by adding beef mixture evenly, then layer lettuce, tomatoes, cheese, and Greek yogurt.
  • Squeeze fresh lime juice on top for brightness and serve immediately.
