Ingredients
  

  • Ripe bananas mashed: 2 medium
  • Eggs: 4
  • Oat flour: 1 cup
  • Greek yogurt: 1/2 cup
  • Baking powder: 1 teaspoon
  • Vanilla extract: 1 teaspoon
  • Cinnamon: 1/2 teaspoon
  • Salt: 1/4 teaspoon
  • Honey or maple syrup: 1 tablespoon
  • Butter or oil for cooking: 1 tablespoon

Instructions
 

  • Mash bananas in a bowl until smooth and slightly creamy.
  • Add eggs, Greek yogurt, and vanilla extract, then mix until well combined.
  • Stir in oat flour, baking powder, cinnamon, salt, and honey, mixing into a smooth batter.
  • Heat a non-stick pan over medium heat and lightly grease with butter or oil.
  • Pour small portions of batter, cook each side for 2–3 minutes until golden and set.
  • Flip carefully, cook fully, then serve warm with preferred toppings.
