Ripe bananas
mashed: 2 medium
Eggs: 4
Oat flour: 1 cup
Greek yogurt: 1/2 cup
Baking powder: 1 teaspoon
Vanilla extract: 1 teaspoon
Cinnamon: 1/2 teaspoon
Salt: 1/4 teaspoon
Honey or maple syrup: 1 tablespoon
Butter or oil
for cooking: 1 tablespoon
Instructions
Mash bananas in a bowl until smooth and slightly creamy.
Add eggs, Greek yogurt, and vanilla extract, then mix until well combined.
Stir in oat flour, baking powder, cinnamon, salt, and honey, mixing into a smooth batter.
Heat a non-stick pan over medium heat and lightly grease with butter or oil.
Pour small portions of batter, cook each side for 2–3 minutes until golden and set.
Flip carefully, cook fully, then serve warm with preferred toppings.
