For the Filling:

  • 1 tbsp olive oil
  • 2 cups fresh spinach chopped

  • 2 garlic cloves minced
  • 1 small onion finely chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper

  • 1 tbsp lemon juice

For the Puff Pastry:

  • 1 sheet vegan puff pastry thawed
  • 1 tbsp plant-based milk for brushing

  • Blend soaked cashews, lemon juice, nutritional yeast, and sautéed spinach mixture into a thick creamy paste.
  • Roll out puff pastry and cut into 12 squares.
  • Spoon filling into each square’s center. Fold into triangles. Press edges with a fork like a pro.
  • Brush tops with plant milk for that golden goddess finish.
  • Bake for 20 minutes or until gloriously golden.
  • Let cool (just barely) and serve.
