Ingredients
  

  • 2 cans 15 oz each black beans, drained and rinsed
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can 14.5 oz diced tomatoes with green chilies
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper adjust to taste
  • 4 cups vegetable broth
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish optional

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and cook for 5 minutes, until softened.
  • Stir in garlic and cook for 1 minute, until fragrant.
  • Add red and green bell peppers, cook for 3 minutes.
  • Sprinkle in cumin, chili powder, paprika, and cayenne pepper. Stir to coat veggies.
  • Pour in diced tomatoes with chilies and black beans. Stir well.
  • Add vegetable broth, bring to a boil.
  • Lower heat and simmer for 20 minutes, stirring occasionally.
  • Stir in lime juice, season with salt and pepper.
  • Garnish with fresh cilantro and serve hot.
