Vegan Samosa Bites
Ingredients

- 2 medium potatoes peeled and boiled
- 1/2 cup green peas fresh or frozen
- 1 tbsp oil
- 1/2 tsp cumin seeds
- 1/2 tsp garam masala
- 1/2 tsp ground coriander
- 1/2 tsp turmeric
- 1/4 tsp red chili powder
- Salt to taste
- 1 tbsp lemon juice
- 1 tbsp chopped cilantro optional, but cute
For the Wrap:
- 1 pack vegan wonton wrappers or phyllo pastry sheets
- 1 tbsp plant-based milk or oil for brushing
Instructions
- Boil potatoes until tender. Mash them like you’re processing your feelings.
- Heat oil in a pan. Add cumin seeds and let them pop—like your group chat after gossip drops.
- Add mashed potatoes, peas, turmeric, chili, coriander, and salt. Stir till everything gets cozy.
- Squeeze in lemon juice. Add chopped cilantro if you’re into herbaceous drama.
- Let filling cool. Cut wrappers into squares if using phyllo.
- Place 1 tsp of mixture in center of each square. Fold into triangles or bundles.
