Ingredients
  

For the Filling:

  • 2 medium potatoes peeled and boiled
  • 1/2 cup green peas fresh or frozen
  • 1 tbsp oil
  • 1/2 tsp cumin seeds
  • 1/2 tsp garam masala
  • 1/2 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/4 tsp red chili powder
  • Salt to taste
  • 1 tbsp lemon juice
  • 1 tbsp chopped cilantro optional, but cute

For the Wrap:

  • 1 pack vegan wonton wrappers or phyllo pastry sheets
  • 1 tbsp plant-based milk or oil for brushing

Instructions
 

  • Boil potatoes until tender. Mash them like you’re processing your feelings.
  • Heat oil in a pan. Add cumin seeds and let them pop—like your group chat after gossip drops.
  • Add mashed potatoes, peas, turmeric, chili, coriander, and salt. Stir till everything gets cozy.
  • Squeeze in lemon juice. Add chopped cilantro if you’re into herbaceous drama.
  • Let filling cool. Cut wrappers into squares if using phyllo.
  • Place 1 tsp of mixture in center of each square. Fold into triangles or bundles.
  • Seal edges with plant milk or water. Brush tops with more milk/oil for that glow-up.
  • Bake at 375°F for 15 minutes or air fry at 350°F for 12 until crisp.
  • Cool slightly. Pretend to share.
