Sweet Potato Hash Recipe
Ingredients
- Sweet potato peeled and diced: 2 cups
- Olive oil: 1½ tbsp
- Onion chopped: ½ cup
- Bell pepper chopped: ½ cup
- Garlic minced: 1 tsp
- Smoked paprika: ½ tsp
- Black pepper: ½ tsp
- Salt: ¾ tsp
- Dried oregano or thyme: ½ tsp
- Fresh parsley chopped: 2 tbsp
Instructions
- Heat olive oil in a pan over medium heat.
- Add sweet potato using 2 cups, spreading evenly.
- Cook 8–10 minutes, stirring occasionally, until lightly crisp.
- Add onion and bell pepper to the pan.
- Cook 4 minutes until softened.
- Stir in garlic, paprika, oregano, salt, and pepper.
