Sweet Potato and Quinoa Veggie Burger Recipe
Ingredients
- 1 cup cooked quinoa
- 1 cup mashed sweet potatoes about 1 medium potato
- 1/2 cup grated carrot
- 1/2 cup finely chopped bell pepper
- 1/4 cup breadcrumbs
- 2 tbsp flaxseed meal + 5 tbsp water vegan egg substitute
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat oven to 375°F if baking, or heat skillet over medium heat.
- Mix flaxseed meal with water; let sit for 5 minutes.
- Combine mashed sweet potatoes, cooked quinoa, chopped veggies, breadcrumbs, spices, and flax mixture.
- Form mixture into 4 patties, about 1/2 inch thick.
