Protein Turkey Stuffed Potato Recipe
Ingredients
- Large potatoes: 2
- Vegan turkey mince soy or pea protein based: 250 g
- Olive oil: 1½ tbsp
- Onion finely chopped: ½ cup
- Garlic minced: 1 tsp
- Smoked paprika: 1 tsp
- Black pepper: ½ tsp
- Salt: ¾ tsp
- Dried oregano or thyme: ½ tsp
- Nutritional yeast: 1½ tbsp
- Plant milk: 2 tbsp
- Fresh parsley chopped: 2 tbsp
Instructions
- Preheat oven to 200°C.
- Pierce potatoes with a fork and place on a baking tray.
- Bake 25–30 minutes until soft inside.
- Heat olive oil in a pan over medium heat.
- Add onion and sauté 3 minutes until soft.
- Add garlic and cook 30 seconds until fragrant.
- Add vegan turkey using 250 g, breaking gently.
- Season with paprika, oregano, salt, and pepper.
- Cook 5–6 minutes until heated and lightly browned.
- Cut baked potatoes open and scoop centers into a bowl.
- Mash potato with plant milk and nutritional yeast.
- Stuff mash back into skins and top with turkey mixture.
- Garnish with parsley and serve hot.
