Protein Sweet Potato Mash Recipe
Ingredients
- Sweet potatoes peeled and cubed: 2 cups
- Silken tofu: ½ cup
- Unsweetened almond milk: ¼ cup
- Nutritional yeast: 1½ tbsp
- Olive oil or vegan butter: 1 tbsp
- Cinnamon powder: ¼ tsp
- Garlic powder: ¼ tsp
- Salt: ¾ tsp
- Black pepper: ¼ tsp
- Fresh parsley or chives chopped: 1 tbsp
Instructions
- Add sweet potatoes to a saucepan and cover with water.
- Boil for 18–20 minutes until fork-tender, then drain completely.
- Transfer potatoes to a bowl with silken tofu and almond milk.
- Mash until smooth and creamy.
- Stir in nutritional yeast, oil, cinnamon, garlic powder, salt, and pepper.
- Adjust texture with extra milk if needed.
