  • Olive oil — 2 tablespoons
  • Vanilla extract — 1 teaspoon
  • Salt — ¼ teaspoon

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Add sourdough starter (1 cup) and almond milk (¾ cup) to a bowl.
  • Stir in maple syrup (2 tablespoons) and olive oil (2 tablespoons).
  • Add oat flour (1½ cups) and protein powder (½ cup).
  • Mix until smooth batter forms.
  • Stir in baking powder (1 teaspoon), baking soda (½ teaspoon), vanilla extract (1 teaspoon), and salt (¼ teaspoon).
  • Pour batter evenly into 6 muffin cups.
  • Bake for 18–20 minutes until firm.
