  • Cooked lentils brown or green: 1½ cups
  • Breadcrumbs: ½ cup
  • Onion finely chopped: ½ cup
  • Garlic minced: 1 tbsp
  • Olive oil: 1½ tbsp
  • Cumin powder: 1 tsp
  • Smoked paprika: 1 tsp
  • Black pepper: ½ tsp
  • Salt: ¾ tsp
  • Fresh parsley chopped: 2 tbsp
  • Lemon juice: 1 tsp

Instructions
 

  • Add lentils using 1½ cups to a bowl.
  • Mash lentils until chunky, not smooth.
  • Add onion, garlic, breadcrumbs, parsley, lemon juice, salt, and spices.
  • Mix until the mixture holds together easily.
  • Shape mixture into small balls, about 1½ tbsp each.
  • Heat oil in a pan over medium heat.
  • Place balls gently in the pan, spacing evenly.
  • Cook 3–4 minutes per side until golden and crisp.
  • Remove and rest briefly before serving.
