Protein Chocolate Cookies Recipe
Ingredients
- Rolled oats: 1 cup
- Oat flour: ½ cup
- Plant-based chocolate protein powder: ¾ cup
- Cocoa powder unsweetened: 2 tbsp
- Peanut butter or almond butter: ⅓ cup
- Maple syrup: ¼ cup
- Almond milk unsweetened: ¼ cup
- Baking powder: ½ tsp
- Vanilla extract: 1 tsp
- Salt: a pinch
- Dark chocolate chips vegan, optional: 2 tbsp
Instructions
- Preheat oven to 180°C and line baking tray with parchment paper.
- Combine oats, oat flour, protein powder, cocoa, baking powder, and salt in a bowl.
- Mix peanut butter, maple syrup, almond milk, and vanilla separately until smooth.
- Add wet mixture to dry ingredients and stir into thick dough.
- Fold in chocolate chips if using.
- Divide dough into six portions and flatten slightly on tray.
- Bake for 12 minutes until edges set and centers remain soft.
- Cool briefly before serving.
