Ingredients
  

  • Vegan chicken chunks soy or pea protein based: 300 g
  • Sweet potato peeled and cubed: 2 cups
  • Olive oil: 2 tbsp
  • Garlic powder: ½ tsp
  • Smoked paprika: 1 tsp
  • Black pepper: ½ tsp
  • Salt: ¾ tsp
  • Dried thyme or oregano: ½ tsp
  • Chili flakes optional: ¼ tsp
  • Fresh parsley chopped: 2 tbsp

Instructions
 

  • Preheat oven to 200°C.
  • Add sweet potato cubes using 2 cups to a bowl.
  • Toss with 1 tbsp olive oil, salt, paprika, and pepper.
  • Spread sweet potatoes on a baking tray.
  • Roast 18–20 minutes, flipping once, until golden.
  • Heat remaining oil in a pan over medium heat.
  • Add vegan chicken using 300 g.
  • Season with garlic powder, herbs, chili flakes, and salt.
  • Cook 6–7 minutes until lightly crisp and heated through.
  • Combine roasted sweet potatoes with chicken.
  • Garnish with parsley and serve warm.
