Protein Banana Cookies Recipe
Ingredients
- Ripe banana mashed: 1 large
- Rolled oats: 1 cup
- Plant-based vanilla protein powder: ¾ cup
- Peanut butter or almond butter: ⅓ cup
- Almond milk unsweetened: ¼ cup
- Baking powder: ½ tsp
- Cinnamon powder: ½ tsp
- Vanilla extract: 1 tsp
- Salt: a pinch
- Dark chocolate chips vegan, optional: 2 tbsp
Instructions
- Preheat oven to 180°C and line baking tray with parchment paper.
- Mash banana in a bowl until smooth.
- Add peanut butter, almond milk, and vanilla, then mix well.
- Stir in oats, protein powder, baking powder, cinnamon, and salt.
- Fold until thick dough forms.
- Add chocolate chips if using.
- Scoop dough into six portions and flatten slightly.
- Bake for 12 minutes until set but soft.
- Cool briefly before serving.
