Ingredients
  

  • Ripe banana mashed: 1 large
  • Rolled oats: 1 cup
  • Plant-based vanilla protein powder: ¾ cup
  • Peanut butter or almond butter: ⅓ cup
  • Almond milk unsweetened: ¼ cup
  • Baking powder: ½ tsp
  • Cinnamon powder: ½ tsp
  • Vanilla extract: 1 tsp
  • Salt: a pinch
  • Dark chocolate chips vegan, optional: 2 tbsp

Instructions
 

  • Preheat oven to 180°C and line baking tray with parchment paper.
  • Mash banana in a bowl until smooth.
  • Add peanut butter, almond milk, and vanilla, then mix well.
  • Stir in oats, protein powder, baking powder, cinnamon, and salt.
  • Fold until thick dough forms.
  • Add chocolate chips if using.
  • Scoop dough into six portions and flatten slightly.
  • Bake for 12 minutes until set but soft.
  • Cool briefly before serving.
