Protein Almond Cookies Recipe
Ingredients
- Almond flour: 1 cup
- Rolled oats: ½ cup
- Plant-based vanilla protein powder: ¾ cup
- Almond butter: ⅓ cup
- Maple syrup: ¼ cup
- Almond milk unsweetened: ¼ cup
- Baking powder: ½ tsp
- Vanilla extract: 1 tsp
- Almond essence optional: ¼ tsp
- Salt: a pinch
- Sliced almonds optional: 2 tbsp
Instructions
- Preheat oven to 180°C and line baking tray with parchment paper.
- Add almond flour, oats, protein powder, baking powder, and salt to a bowl.
- Whisk almond butter, maple syrup, almond milk, vanilla, and almond essence until smooth.
- Combine wet ingredients with dry mixture to form thick dough.
- Fold in sliced almonds if using.
- Divide dough into six portions and flatten gently on tray.
- Bake for 12 minutes until edges set and centers remain soft.
- Cool briefly before serving.
