Paleo Pecan and Cinnamon Snack Bars
Ingredients
- 1 cup pecans
- 1/2 cup almonds
- 1 cup Medjool dates pitted
- 1/4 cup shredded coconut
- 2 tbsp almond butter
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- Pinch of sea salt
Instructions
- Preheat oven to 325°F (160°C) and line your baking dish with parchment.
- Add pecans, almonds, and coconut to a food processor. Pulse until coarsely chopped.
- Toss in dates, almond butter, cinnamon, vanilla, and salt. Blend until it forms a sticky dough.
- Press the dough evenly into the lined baking dish.
- Bake for 18–20 minutes until firm and golden around edges.
- Let cool completely before slicing into bars.
- Store in an airtight container or directly in your face.
