Ingredients
  

For the Ribs:

  • 2 racks of pork ribs
  • 1 tbsp olive oil
  • 1/4 cup apple cider vinegar
  • 1/2 cup paleo BBQ sauce
  • Salt and pepper to taste

For the Coleslaw:

  • 4 cups shredded cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup paleo-friendly mayo
  • 1 tbsp apple cider vinegar
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 300°F (150°C).
  • Rub ribs with olive oil, salt, pepper, and apple cider vinegar.
  • Wrap ribs tightly in foil and bake for 2 hours.
  • Mix cabbage, carrots, mayo, vinegar, salt, and pepper in a bowl for coleslaw.
  • After 2 hours, remove ribs, brush with BBQ sauce, and grill for 5-10 minutes.
